Lemon Garlic Butter Scallops

1 lb large sea scallops, patted dry
Salt and black pepper to taste
2 tablespoons olive oil
3 tablespoons unsalted butter
3 cloves garlic, minced
1 tablespoon fresh lemon juice
Zest of 1 lemon
2 tablespoons chopped fresh parsley
Lemon wedges for serving

Pat the scallops dry with paper towels. Season with salt and black pepper on both sides.
In a large skillet, heat olive oil over medium-high heat.
Add the scallops to the skillet, making sure not to overcrowd them. Sear for 2-3 minutes on each side until they develop a golden-brown crust.
Remove the scallops from the skillet and set them aside.

Remove from heat.
